Zucchini Casserole

Compliments of the Amish Cook!

2 medium sized zuchinni, peeled and cut into cubes
2 eggs slightly beaten
1/4 cup milk
1 tsp baking powder
2 Tbsp flour
2 cups cheddar cheese
1/2 cup onion chopped
1/4 cup green pepper chopped
2 cloves garlic minced

Steam or boil zuchinni till almost tender but don't overcook. Drain and cool. In a medium bowl whisk eggs, flour, milk, baking powder cheese, onion, green pepper, and garlic. Stir in zuchinni. Bake in greased casserole dish for about 30 minutes at 350. Let stand for a few minutes before serving.

*note- I used a pie pan for this recipe. Double recipe next time in larger pan.
