"Purple Cupcakes" Cupcake Sponge

A delicious yellow cupcake-the best I've found via Purple Cupcakes!  It really does make a difference when you weigh the ingredients on a scale.

150 grams of Stork
150 grams of sugar
150 grams of self rising flour
3 largish eggs
1 tsp vanilla

Yes- that's it!  No liquids!
Bake 155 C for 25-28 minutes or till nice and brown in done in center. 

Pumpkin Cinnamon Cupcakes

These are absolutely to DIE for!

Preheat oven to 350 degrees. 

Mix together dry ingredients in a bowl~

1 3/4 cup flour
1/4 cup cornstarch
2 tsp Baking Powder
1 tsp Baking Soda
3/4 tsp salt
2 tsp cinnamon

Cream Together

3/4 cup oil
2 cups sugar
4 eggs
15 oz can pumpkin  (i used 12 oz with no problem)

Mix Dry into wet by hand stirring till just moistened.   Bake at 350 till done-  they brown very fast. 
Makes 18 cupcakes
