Glazed Brown Sugar Meatloaf

I don't like meatloaf Let me rephrase that. I HATE meatloaf. But THIS meatloaf is to die for- no joke. It is moist and the glaze is awesome!

2 pounds Ground Beef
1 1/4 cup Bread Crumbs or crushed crackers
1 cup milk ( I add this last and added quite less)
1 egg
1 onion chopped
various seasonings ( Lawry's, cajun salt, etc)

Combine above ingredients in large bowl. If you want to test the seasonings you can put a tiny hunk in the microwave to taste it Form into a load and place on top of rack if you dont want the meat cooking in the grease. Or you can pat it into a glass pan (like i did) since you will drain the grease later on)

Cook 350 until done and drain grease.

Barbecue Sauce

You might have to pat grease from off the top too. Liberally sprinkle brown sugar all over the top. I didnt measure. Just pour it on there. On top of the brown sugar take your favorite bbq sauce and pour it on top of the meatloaf. Liberally. Put back in oven and turn up the heat to 400 degrees or so and bake for another 10 or 15 minutes. The glaze will thicken


Multiply recipe by 3 using 6 pounds of ground beef for a 12 by 16 large pan for a large group. Multiply recipe by 6 using 12 pounds of ground beef and use a 12 by 16 AND 13 by 9 pan. Meat loaf mixture can be stored in freezer for later cooking.
