Creamed Potato Casserole

This recipe was given to me by my mom, and is always a hit. I cook the onions, just put them in a little water in the microwave, and soften them up a bit.

1 large (32 oz) bag frozen hash brown potatos (shredded kind)
1/2 cup melted butter
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup chopped onion
2 cups shredded cheddar cheese
1 can cream of chicken soup
1 pint (16 oz) sour cream

Thaw potatos, and put in a greased 9X13" pan. Combine all other ingredients and pour over potatoes-Bake @ 350 degrees, 45 minutes, uncovered. Top with more cheese, or bread crumbs or crushed potato chips, or chopped up cooked bacon. Yummy and all the calories you want and more!!
