Chicken a la King

This has been one of our favorites for years. It is a little bland but still very rich and, dare I say it... fattening! A very good way to use up leftover baked chicken.

1 Green Pepper- chopped or sliced- whichever you prefer
1 Onion- chopped or sliced- whichever you prefer
1/2 cup butter or margarine
1/2 cup flour
1 tsp salt
1/4 tsp pepper
1 1/2 cup milk
1 1/4 chicken broth (you can use boullion cubes or leftover drained broth)
2 cups cooked chicken- cut up
mushrooms- fresh or canned with liquid drained

Melt butter in deep pan or pot. Add Green Pepper and Onions. Add flour and constantly stir till nice and bubbly. Add chicken broth and milk. Cook and Stir on medium heat till mixture thickens. Add chicken and mushrooms and cook till mushrooms are done. Serve over white rice egg noodles. You can add frozen peas and/or frozen peas and carrots if you like for color
