Baked Chicken Cordon Bleu

Cook Time: 40 Min.
Prep Time: 20 Min.
Yields: 6 servings
Preheat oven to 350 degrees F (175 degrees C)

This is an easy version of Chicken Cordo Bleu but the taste is just as delicious!!! The most difficult part is pounding out the chicken. I put them in a ziploc bag and pound them while in the bag. Makes much less of a mess.

6 skinless, boneless chicken breast halves-pounded to 1/2 inch thickness
6 string cheese sticks or whatever cheese you desire.
6 slices ham
1/2 cup butter, melted
1 cup seasoned dry bread crumbs (you can use Italian, ordinary and even add some Parmesan cheese to this too)
toothpicks

Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese or slice. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place in a shallow baking dish.

Cover and bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear. Remove foil to brown.

Very Delicious! AND SOOOO EASY!!! I am excited to experiement with this recipe and try some different versions (like pepperoni and mozarella in the middle). I was always intimidated to try to make this, but it was really easy!
