Southern Style Collard Greens

Another great recipe from Debbie. =)

Ham Hock Seasoning-

2 pounds ham hocks (smoked is BEST)
1 quart water to cover
pinch baking soda
Bring to a boil and cover and cook 2 hours. Add water as neccesary. You will have 3 cups of liquid when finished


2 1/4 pound Collard Greens (1 1/2 bunces)
3 cups hamhock seasoning (recipe above)
2 ham hocks
1/4 cup bacon grease
salt and pepper to taste
3/8 tsp sugar
3 Tbsp chopped onion
1/2 tsp vinegar
Tabasco sauce

Cut off stems of collards about 4 to 5 inches from base. Remove tough stems. Discard blemished leaves. Roughly cut leaves and rinse and drain. Rinse over and make sure leaves are thoroughly cleaned. Place in kettle. Add ham hock seasoning, liquids, sugar, bacon grease, salt, pepper, onion, seasonings and salt. Cover and cook for two hours and/or till greens are tender. Drain some of the juice and add vinegar and Tabasco.
